Chocolate Zucchini Bread

  Be a star this summer when you bring this incredibly delicious yet healthy treat to picnics as a dessert.

Who will be expecting zucchini, a favorite summer veggie, and chocolate together?!

It also makes an awesome, super quick breakfast paired with a hard-boiled egg on busy, summer mornings.

 

I snagged this recipe from Whole Foods but changed it up a bit by using whole-wheat flour, maple syrup instead of sugar, coconut oil instead of canola, extra zucchini and dark chocolate chips. I also eliminated the agave syrup they listed because I don't think it's any different from high-fructose corn syrup NOR is it a local ingredient. And it was already sweet enough.

You can make this as a loaf, slice it and add some butter on top (omg) or make it into muffins and dust with some raw cacao powder. Just have fun and try not to eat the whole thing in two days, like we did. Whoops!

 

CHOCOLATE ZUCCHINI BREAD

Ingredients 1 1/3 cups whole wheat flour 2/3 cup maple syrup 1/2 cup raw cacao powder 1 tsp ground cinnamon 1/2 tsp ground cloves 3/4 tsp baking powder 1/2 tsp baking soda 1/8 tsp salt 1/4 cup almond milk 1 egg 2 Tbsp coconut oil 1 tsp vanilla extract 2 cups shredded zucchini 3/4 cup dark chocolate chips

Instructions 1) Preheat oven to 350 degrees F. Coat 9" x 5" pan with real butter (not the recommended cooking spray) or line muffin tin with paper liners. 2) In a large bowl, whisk together flour, maple syrup, cacao, cinnamon, cloves, baking powder, baking soda and salt. 3) In a small bowl, whisk together milk, egg, oil and vanilla. Stir into dry ingredients. Fold in zucchini and chocolate chips. Pour into baking pan or muffin tin. 4) Bake until toothpick inserted comes out clean, 35-45 minutes. Cool 10 minutes. Remove and cool on rack.

Chocolate Cordial Cherry Chia Shake

Packed full of superfoods and tasty as all get-out, give this bad boy a try for breakfast or after a workout. With something this incredible waiting for you as a reward, walk or jog that extra half mile--because you're awesome like that.

Chocolate Cordial Cherry Chia Shake

Ingredients

4 oz. Cheribundi tart cherry juice 1 scoop Garden of Life Raw Natural flavor vegan protein powder (or protein powder of choice) 1 frozen banana 1 Tbsp chia seeds 1 Tbsp raw cacao powder 1 big handful baby spinach 1 cup unsweetened almond milk a couple of ice cubes

Blend all ingredients together in a high-powered blender and drink cold.

Chocolate Peanut Butter Banana Green Smoothie

You saw the picture. You saw the word green in the title and you were like, "Dillan?"

Yep.

There's greens in here. Spinach, actually. Can't see it? Cool! Maybe, if you're afraid of greens, it will make you want to drink it. Or it will make your kids want to drink it.

I'm not usually all about "hiding" healthy food within food but if ya gotta, ya gotta.

I do this demo for college audiences and they totally love it. I use it to show them how you can add greens to pretty much anything and completely take it from a guilty pleasure to a healthy nutritional snack.

Here you go!

Chocolate Peanut Butter Banana Green Smoothie

Ingredients

2 Tbs. raw cacao powder

1 banana broken into chunks and frozen

1 tsp freshly ground peanut butter

2 big handfuls of raw baby spinach

1 cup almond milk

1/2 cup ice

*you can also add a protein powder of your choice: hemp, whey, pea, etc. I don't recommend soy.

Instructions

1) Combine ingredients and blend.

2) Serve in a tall glass with a straw!

You will need a high-powered blender to get this blended together. I use a Vitamix. We saved a little and bought a refurbished one for about $379. It's one of the best investments I've made. We use it almost every day and you can even use it for soups and stews--not just cold drinks.
